Eagle Vale:
Shiraz 2002

Region: Margaret River

Grape Variety: Shiraz

Vintage: 2002

Oak Maturation: 10 months - French Oak

Alcohol: 14%

Release Date: 2004

Wine Makers comments:
Gentle whole bunch pressed. The must is fermented in closed tank with daily plunging of the cap. No sulphur is added prior to fermentation. After malolactic (secondary) fermentation in tank the wine is matured in French Oak for 18 months. Regular racking and minimal filtration is done to maintain the original flavours.

Assessment (Prior to bottling.):

Colour: A rich red plum and ruby hue.

Palate: A refined wine with touch of white pepper spice, floral lift, wild black cherries and soft velvety tannin length. A full flavoured, yet elegant style reflecting the winemaker's philosophy and the southern Margaret River terroir typicity. An exceptional vintage of dry grown grapes and very low yields.

Cuisine: Venison, mediterranean dishes or rich camembert.
